Roasted Cornish Games with Pomegranate & Pineapple Chipotle Grill Sauce

  • 4  Cornish game hens, washed and dried inside and out
  • 1  13.25 oz. bottle Kozlowski Farms Pomegranate & Pineapple
  •   Roasted Chipotle Grill Sauce
  • 3/4  cup  Dutton Estate Chardonnay Wine
  • 1/2  cup  Butter
  •   Salt and Pepper to taste

Pre-heat oven to 325 degrees.

Heat the Kozlowski Farms Pomegranate & Pineapple Roasted Chipotle Grill Sauce, Chardonnay wine and butter in a medium sauce pan over medium heat. Stir constantly to avoid burning the butter. When the butter is completely melted, cover and set aside the prepared sauce. Salt and pepper the hens inside and out. Tie the hen legs together with twine, tucking the wing tips under the body. Place them in a heavy-duty roasting pan with a rack and brush generously with sauce. Put the hens in the pre-heated oven. Bake for 1-1/2 to 2 hours, until they are golden brown, basting every 15 minutes with chipotle-wine-butter sauce. Remove the golden brown hens from the roasting pan and place them on a serving dish. Set the hens aside for 15 to 20 minutes to rest.

While the hens are resting, add the juices from the bottom of the roasting pan to the saucepan with the remaining sauce. If it is too thick, add two tablespoons of Chardonnay wine. Bring contents to a low simmer, adding any additional juices from the resting hens. Pour the simmering sauce into a gravy boat and serve with the hens.
