Prawns Fruit Salad


Ingredients:
  • 1/4  cup  sesame seed oil
  • 1  lb  peeled de-veined prawns
  • 1  medium peeled and sliced red onion
  • 1  medium sized sliced sweet pepper
  • 2  tablespoon  lime juice
  • 2  tablespoon  lemon juice
  • 1  cup  diced pineapple
  • 1/2  cup  white wine
  • 2  tablespoon  white rice vinegar
  • 1/2  cup  soy sauce
  • 1/2  cup  cashews
  • 1-1/2  cup  seedless watermelon balls
  • 1-1/2  cup  cantaloupe or honeydew melon
  • 2  medium diced cucumbers
  • 1  peeled and chopped grapefruit
  • 1/2  cup  cranberries
  • 11  ounce  can mandarin oranges sliced
  •   Kozlowski Farms Sweet & Tangy Honey Mustard Dressing
  •   scallions
  •   basil
  • 3  sprigs mint leafs, sliced
Directions:
Heat sesame seed oil in a medium sauce pan at low heat then add prawns. Cook prawns until they turn white, add onions, peppers, lime juice, lemon juice, white wine, white rice vinegar, soy sauce and cashews and saute. Turn off heat and set pan aside. In a large bowl mix together melons and fruits, then add the prawns, onion, and peppers. After everything is mixed, add Kozlowski Farms Sweet & Tangy Honey Mustard Dressing, scallions, basil and mint.
