Tangy Raspberries with Cream Cheese & Ricotta Mousse


Ingredients:
  • 1  cup  whole milk ricotta
  • 8  ounce  cream cheese, room temperature
  • 1/2  cup  heavy whipping cream
  • 1  packet unflavored gelatin
  • 8  ounce  fresh red raspberries
  • 1/4  cup  Kozlowski Farms Red Raspberry Vinegar
  • 3/4  cup  Kozlowski Farms Red Raspberry Syrup & Sauce
  • 3  drops red food coloring
Directions:

In a small saucepan combine Kozlowski Farms Red Raspberry Vinegar and Kozlowski Farms Red Raspberry Syrup & Sauce, bring to a boil. Put sauce in refrigerator and allow to chill completely before using.

Sprinkle gelatin over heavy whipping cream and let set until gelatin has dissolved, about 2 minutes.

In a food processor add the ricotta, cream cheese and vanilla, pulse until creamy. Add the whipping cream with gelatin, Kozlowski Farms Seedless Red Raspberry Jam and food coloring. Continue to process all ingredients until they are thick and creamy.

ransfer to a small bowl and refrigerate for a least 2 hours or until ready to serve.

Cream chilled mousse with a spatula and divide into martini glasses. Toss berries in tangy vinegar and syrup mixture and spoon over mousse.
