Gravenstein Apple Cobbler Cake


Ingredients:
  • 6  cup  Peeled and sliced Gravenstein apples, ½ inch slices (5 to 6 medium apples)
  • 1/2  teaspoon  Cinnamon, ground
  • 3/4  cup  Apple Cider
  • 1  Juice of Lemon
  • 2  cup  Sugar, divided (1 cup for apple mixture, 1 cup for cobbler cake)
  • 1 1/2  cup  Flour, self-rising
  • 1 1/2  cup  Whole Milk
  • 1  cup  Butter
  •   Lightly sweetened whipped cream or vanilla ice cream
Directions:
Preheat oven to 350 degrees.

Combine the sliced apples, cinnamon, one cup sugar, lemon juice and apple cider in a large saucepan. Mix well, coating apples with the syrup base. Bring to a boil, turn heat down and simmer for about 8 to 10 minutes.

Using a 9x13 baking pan, melt butter in the microwave or saucepan over heat and pour evenly over baking surface.

To make the cobbler cake, whisk together remaining cup of sugar, flour and milk slowly to prevent clumping.

Gently pour batter over melted butter in baking pan. Spoon cooked apples over top of batter. Batter will start to emerge between apples. Pour remaining syrup over top of cobbler cake.

Bake on the middle rack of a preheated 350 degrees for about 45 minutes, until top of the cake is crisp and a golden brown. Allow to cool slightly, then cut into squares and serve with whipped cream or ice cream.
