BREAD PUDDING:
Preheat oven to 350 degrees.
Slice bread into 3/4 to 1-inch cubes (about 8 cups) and set aside.
In a saucepan over medium heat, whisk together cream, half-and-half, Kozlowski Farms Apple Cider, eggs, sugar and salt, stirring occasionally so mixture does not burn. Bring to a simmer and turn off heat. Add the shredded apples, Kozlowski Farms Apple Butter and vanilla.
Coat a 14" x 11" baking dish with non-stick spray. Place raisin bread cubes in the baking dish. Pour cream and apple mixture over bread cubes, making sure bread is evenly coated with cream mixture and apples are evenly distributed throughout the baking dish.
Bake at 350 degrees for about 55 to 60 minutes until pudding is golden brown.
APPLE & LEMON SAUCE:
In the top of a double boiler over simmering water, whisk together the cream, Kozlowski Farms Apple Cider, Kozlowski Farms Organic Lemon Curd, sugar, egg yolks and salt. Continue to whisk over heat until sauce slightly thickens, about 8 to 10 minutes. Sauce may be served warm or cold over pudding.
Enjoy!
