Asparagus & Spinach a la Raspberry & Poppy Seed


Ingredients:
  • 1 bunch  fresh asparagus
  • 2  large bundles fresh spinach, washed well with stems removed
  • 1 bottle (12oz.)  Kozlowski Farms Raspberry Poppy Seed Dressing
  • 1/2  cup  fresh red raspberries (seasonal) or frozen and thawed raspberries
Directions:
Steam asparagus until cooked (still crisp).

Arrange on a sizeable platter and pour the Kozlowski Farms Raspberry Poppy Seed Dressing over warm asparagus. Set aside.

In steamer, place washed and stemmed spinach and slightly wilt the spinach with the steam.

Arrange wilted spinach on two large plates. Transfer the asparagus onto the spinach and drizzle with dressing.

Gently sprinkle raspberries over the spinach and asparagus.

Enjoy as a first course or light dinner entree.
